Recipe tips
Make the pancake as thin as possible, so make sure that the sauce is not too thick.
You can also prepare the pancake with milk instead of water.
1.
Mix the flour with salt, 2 sp of sugar, sodium bicarbonate and a whole egg. Gradually add water and stir to avoid lumps. You should get a smooth and a bit thick sauce.
2.
Crush the cheese with a fork and add 3 sp of sugar and the lemon zest. Mix well.
3.
In a pan put very little butter (just a thin layer at the bottom), heat it up, and, with the help of a ladle, pour a thin layer of the pancake sauce, while turning the pan to make the sauce cover the whole of its bottom. After 1-2 minutes, use a spatula to turn the pancake on the other side. When ready, put the pancake on a flat plate and fill it with some of the cheese mixture. Then fold it up and let it cool.
4.
You can also fill and fold up the pancake when it is colder, if it is thin enough.
5.
There will be approximately 15 pancakes. You can serve them covered with chocolate sauce or glaze.
